Simple Whole Roasted Barramundi

Ingredients

  • 1 Australis Barramundi - cleaned, gutted, scaled
  • 2 Tablespoons, extra virgin olive oil
  • 1 whole lemon
  • 1 Teaspoon kosher salt
  • ½ Teaspoon fresh ground black pepper
  • 1 Tablespoon butter

Preparation

  1. Preheat oven to 450. Make three incisions in each side of fish.
  2. Season with one tablespoon of olive oil and half the lemon juice.
  3. Season with salt and pepper.
  4. Place fish in a shallow baking dish, dab with butter and roast for 15-20 minutes.

To serve, remove fish from pan and place on platter. Drizzle remaining olive oil and lemon juice over fish and garnish with chopped chives, fennel leaves or fresh rosemary. Serve with roasted Yukon Gold Potatoes.
